Yummy Weekday Breakfast Ideas (Hold the Cereal, Please)- Chapati Breakfast Wrap
Day 1
Yesterday in The Great Breakfast Dilemna I told you that my family and I are trying a breakfast experiment this week. Five days of new breakfast ideas that DON’T include cereal. I don’t have anything against cereal, honestly…(Please don’t post comments like ‘you’re a big, fat cereal-hater’. You’ll hurt my feelings…) It’s just that we had lost sight of the fact that a simple bowl of cereal on its own is not nutritionally balanced, and…(here’s the real reason)…it’s BORING!
So, today was Day 1: Chapati Breakfast Wrap.
This is SO easy to make! And quick! (Absolutely no longer than it takes to make regular egg and toast).
- First make your eggs, omelette-style. If you like them spicy, add some chilli powder or chopped up chillis. Add salt and pepper to taste and some fresh coriander/cilantro (I omitted this because the girls don’t like it in eggs). If you’d really like to make them Indian-style, finely chop some onion, add some cumin and coriander powder, and fry this for about 5-7 minutes on low heat until the spices come together and the onion is soft and transluscent. But you don’t have to, today we just did plain egg with salt and pepper.
- Chapatis are Indian flatbreads and are widely available in supermarkets. They are sometimes also called roti. So… all you do is, warm up your chapati in the manner that best suits you. We usually warm ours over a naked flame for about 30 seconds, but you could use a toaster oven or a griddle or frying pan with equally good results. I don’t recommend using the microwave because it makes the bread chewy and not very nice.
- Lay the egg on top of the chapati and roll the whole thing like a burrito or wrap. (When I re-read this line, I couldn’t help but giggle when it made me picture a hen laying an egg on the chapati, but I digress…)
- Have some yoghurt on the side to dip in and hey, presto…breakfast is served!
The Verdict : Winner
This went down very well. It was quick and easy for us to make, and most importantly, all three of the girls gobbled it up in record time. My oldest daughter even asked for ANOTHER ONE! I tried not to faint right on the spot. I asked my middle daughter on the way to school if she liked it and if she would want it again, and she said she did and she would. I think that, together with the spotless, empty plates means we will definitely be serving this again.
